Dominican Sazón is a traditional Dominican (from the Dominican Republic) recipe for a classic stew of minced beef in a spiced tomato base that can be served by itself, but which also forms the basis for many other dishes. Ingredients:
2 cubanela, (cubanelle peppers) diced
6 garlic cloves, crushed
1 medium red onion, sliced into strips
3 bunches coriander, finely chopped
1 tsp bija (annato, achiote) powder
1 tbsp fresh oregano leaves, finely shredded
¼ tsp salt
1 tbsp olive oil
Method:
Place a pan over low heat. Add the oil and use to fry all the ingredients until they release their flavour and the onions have become translucent (about 8 minutes). Continue with your cooking preparation.
