Dominica Red Beans Soup is a traditional Dominican (from the Island of Dominica) recipe for a classic stew of smoked pork and red kidney beans with dumplings and provisions in a lightly-flavoured onion base. The 'provisions' referred to in this recipe is the Caribbean term for starchy staples (typically root vegetables, but also including plantains and green bananas).
Ingredients:
1kg Smoked pork (or you can use any salted meat)
1l Water
500g Kidney beans cooked with a little garlic and oil (or use tinned beans)
24 Dominican dumplings of mixed shapes
2 Plantains, peeled and chopped (you can substitute tannia, potatoes, or other provisions)
1 tsp ground Black pepper
1 tsp Paprika
1 tbsp Garlic, crushed
1½ tbsp ground Turmeric
4 sprigs Thyme
1 large Onion, chopped
1 tbsp Salt (this may not be necessary as the smoked pork is salted)
Method:
If using dried beans, soak in water over night then discard the water. Place in a pressure cooker, cover with water and pressure cook for 40 minutes until almost tender. Drain and set aside.
The following day, bring 1.5l water to a boil. Add the smoked pork and cook for 40 minutes. Drain the meat, set aside to cool then shred any meat or skin, picking it off the bone.
When ready to cook, bring 1l of water (unsalted) to a boil, add the beans, return to a boil then reduce to a simmer and cook for 20 minutes.
Add all the remaining ingredients (except the plantains and meat) then return to a boil and cook for 15 minutes more.
At this point add in the meat and plantains. Cook for 10 minutes then add the dumplings and continue to cook for 15 minutes.
Stir the soup and if too thick add a little water. Adjust the seasonings to taste and serve ladled into bowls.
