Dombrés haricots rouges (Red Bean Dombrés) is a traditional Guadeloupean recipe for a classic stew of red beans and bacon or salted pig tails finished with flour dumplings, dombrés. Ingredients:

For the beans:
400g red or pink beans
150g chopped salted bacon/or 4 Salted pig tails (desalted the day before and chopped)
1/4 tsp of baking soda
Salt, freshly-ground black pepper, and allspice (ground berries or leaves), to taste
3 tbsp neutral-flavoured oil
2 onions, quartered
4 cive sprigs
2 garlic cloves, crushed
1 large bouquet garni (thyme, parsley, bay leaf)
6 whole Cloves
Habanero Chilli
allspice berries
allspice leaves

For the dombrés:
250g flour
Lukewarm water
Salt
Lard (optional)

Method:

Wash the beans, place in a large bowl, cover with plenty of water and set aside to soak over night.

Pace a cast iron casserole (Dutch oven) over medium heat. Add a splash of oil and use to fry the onions, cives, garlic, cloves and bacon or pig's tails until the meat is nicely browned all over. Add the remaining spices and bouquet garni then add enough water to cover the ingredients. Bring to a boil then add the drained beans. Pour over enough boiling water to cover and return to a boil. Once boiling add a little baking soda (this will help soften the beans).

Ensure the beans are well covered with stock then cover the casserole dish with a lid. Cook for about 120 minutes, topping up the liquid as needed, until the beans are tender.

In the meantime, prepare the dombrés by mixing the flour, warm water, and salt. You will obtain a dough like bread dough. Let rest for about 30 minutes. Form the dough into balls the size of an olive (or less large).

Add the formed dombrés to the kidney beans and mix thoroughly so they don't settle to the bottom. Remember to add water if necessary to cook the dombrés. Also drop in the whole chilli at this point.

Simmer over medium heat, covered, for 20 minutes. The dombrés will swell (a sign that they are cooked). Gently stir occasionally to prevent the dombrés from sticking to the bottom of the pot.

The sauce will thicken naturally, but if you like it thicker, crush a few beans against the side of the casserole dish.

Enjoy as is, or serve accompanied by grilled meat.
