Ingredients:
3 very ripe bananas, peeled
1 just barely ripened green banana, peeled
a few drops of vanilla extract
120g flour
pinch of ground allspice
1/2 tsp ground cinnamon
pinch salt
2 tbsp oil
Method:
In a bowl, combine the very ripe bananas, flour, vanilla , spices, and salt. Mash and stir to mix thoroughly. Once the ingredients completely combined add the other banana and incorporate using a potato masher, making sure not to over mash, so that your retain some chunks for texture.
Place a non-stick frying pan over medium heat. Once hot add a splash of oil and use to fry 60ml (1/4 cup) of the banana batter. Spread out with the back of a spoon (but don't make too thin). Fry until browned on the base then carefully flip over with a metal spatula.
Continue cooking until the other side is golden then transfer to a low oven to keep warm as you cook the remaining batter.
