Ditakh is the Wolof name for the fruit of Detarium senegalense, commonly known as the Sweet Detar or Boire, which is a flowering plant in the pea family. The fruit are large and have a hard shell that's typically removed before cooking.
Ingredients:
1kg ditakh fruit (sweet Detar)
1.5l water
sugar, to taste
Method:
Wash the fruit thoroughly then peel the ditakh. Soak the green fruit for a few minutes in water and stir with a whisk. This will release the strands so that you can take out the hard cores.
Set aside to soak for 20 minutes then strain the liquid through a fine-meshed sieve.
You will end up with a very green liquid. Sweeten to taste and serve slightly chilled.
