Shito (Dark Chilli Sambal) is a traditional Ghanaian recipe for a dish of prawns in a very hot chilli and tomato sauce. The full recipe is presented here and I hope you enjoy this classic Ghanaian version of: Dark Chilli Sambal (Shito).
Coarsely chop the chillies then pound to a paste in a pestle and mortar. Add a little of the onion and pound this in as well. Heat the oil in a pan and add the chilli paste. Fry for a few minutes then add the onions and ginger and fry for 10 minutes.
Stir-in the tomato paste, bouillon cubes then add the prawns. Cook until the prawns turn pink then serve immediately on a bed of rice.
