Čokoládové lanýže (Czech Chocolate Truffles) is a traditional Czech recipe for a classic chocolate truffle flavoured with rum and ground nuts that's stuffed with a mix of butter, icing sugar, hard-boiled egg yolk and rum. Ingredients:

1 medium egg white
200g icing sugar
120g cocoa powder
2 tbsp rum
75g ground nuts

For the Filling:
1/2 tsp butter
1 tbsp icing sugar
1 medium egg yolk from a hard-boiled egg
1 drop of rum

Method:

Cream together the egg white, sugar, 60g of the cocoa powder, rum and ground nuts. Work the mixture with your hands until smooth then form into walnut-sized truffles.

Meanwhile, prepare the filling by creaming together the butter, sugar, egg yolk and rum. Press a hole in the centre of the truffle and fill with the filling mixture. Reshape the truffles into spheres then roll in the remaining cocoa powder and serve.
