This recipe of sausages served in lightly-curried tomato ketchup has become a street food classic in Germany.
Ingredients:
4 Bratwursts
250ml Tomato Ketchup
1/4 teaspoon of Baking Soda
2 tbsp of Mild Curry Powder
2 tsp of Smoked Paprika
1 tsp of Onion Powder
1/8–1/4 tsp of Cayenne Pepper (or to taste)
2 tsp of Worcestershire Sauce
4 tbsp of Beef Stock
2 (or more) tbsp of Water
Method:
Place the tomato ketchup in a small saucepan over medium-low heat. When the ketchup is hot add the baking soda and stir until the mixture foams and then the foaming subsides.
Reduce the heat to low then add the remaining ingredients. Work in just enough water to help the ingredients mix and to yield a sauce-like consistency. Bring to a simmer then cook on low for 5-10 minutes so the ingredients are hot and the flavours have had an opportunity to meld.
In the meantime, fry or grill the bratwurst until cooked through and nicely coloured. To serve, arrange the bratwurst on a serving dish and pour over the sauce. Accompany with crusty bread and/or chips.
