Curried Squash Soup is a modern British recipe for a classic sup of winter squash cooked in vegetable stock and orange juice that's flavoured with curry powder and Chinese five spice and which makes and excellent soup for Halloween or Bonfire Night. Ingredients:
1 cooked acorn or butternut squash (bake or boil)
2 tbsp curry powder
juice and pulp of 1 orange
120ml vegetable stock
1 tsp Chinese five-spice powder
1/4 tsp cinnamon (to garnish)
1 tsp lemon juice (optional)
Method:
Blend the orange and squash with the lemon juice and beat until smooth. Mix the curry powder and Chinese five-spice with the vegetable stock then whip into the squash purée. Garnish with the cinnamon.
This simple soup can be served either hot or cold.
