Ingredients:

270g Shiratake noodles (or angel-hair pasta) rinsed and drained
20 king prawns
2 tsp curry powder
2 tsp ground cinnamon
1 tsp paprika
2 tbsp green stevia powder
4 tbsp garlic, chopped
4 limes, sliced into wedges
250ml fresh coriander leaves
120ml fresh basil leaves
250ml chicken stock
1/2 tsp olive oil

Method:

Heat the oil in a pan and add the garlic, cayenne pepper, curry powder and paprika. Fry over medium high heat for 2 minutes then add the prawns. Stir-fry for 5 minutes, or until the prawns are cooked through and pink.

Remove the prawns and set aside then add the noodles to the pan along with the tomatoes. Cook for 5 minutes, or until the tomatoes begin to break down then add the cinnamon, stevia powder and chicken stock.

Bring to a simmer and cook for 10 minutes. Arrange 5 prawns in each bowl and divide the noodles between them. Top with the liquid then add the shredded coriander leaves and torn basil leaves. Garnish with lime wedges and serve.
