Ingredients:
2 tbsp groundnut oil
600g boneless, cut into 1.5cm cubes
1/2 large onion, finely chopped
2 large tomatoes, cored and chopped
100g dried apricots
1/2 tsp salt
1 tsp Cape Curry Powder
1 scotch bonnet chilli, pounded to a paste
Method:
Heat the oil in a frying pan and add the mutton cubes. Fry on each side until they are evenly browned. Then add the onion, tomatoes, apricots and the chilli paste. Cook over high heat until the tomatoes soften then add the salt and curry powder and simmer until the meat is tender. (Add water if the stew gets too dry, to prevent burning.)
Serve on a bed of rice and accompanied by a bowl of chilli flakes which can be sprinkled on top.
