Croquettes de Samoun (Salmon Croquettes) is a traditional Canadian recipe (from Quebec) for a classic croquette made from a blend of cooked salmon, cheese, onion and parsley bound with eggs that are shaped into cylinders and fried to cook. The full recipe is presented here and I hope you enjoy this classic Canadian version of: Salmon Croquettes (Croquettes de Samoun).
Combine the salmon, egg, Parmesan cheese, onion, parsley and black pepper in a bowl. Mix thoroughly with your hands then divide into four equal portions. Shape these into balls, patties or croquettes and set aside.
Heat the olive oil in a frying pan over medium heat. Add the croquettes and fry for about 5 minutes per side, or until cooked through and golden brown all over.
Serve hot accompanied by vegetables and rice or potatoes.
