Croquetas de Papa y Quinoa (Chilean Quinoa Croquettes) is a traditional Chilean recipe for a classic accompaniment of croquette rounds made from a mix of quinoa and potatoes bound with egg and flavoureed with onions, parsley and cumin. Ingredients:

200g cooked, mashed, potatoes
100g dried quinoa
1 egg
80g onions, finely chopped
3 tbsp flat-leaf parsley, finely chopped
generous pinch of ground cumin
sea salt and freshly-ground black pepper, to taste

Method:

Prepare the potatoes and mash them. Rinse the quinoa well under cold, running, water then place in a bowl, cover with plenty of water and set aside to soak over night (this leaches out the bitter saponins from the grains). When ready, drain the quinoa, place in a pan then cover with 120ml water and 120ml milk. Bring to a boil and cook for 5 minutes then reduce the heat and simmer for 10 minutes, or until the grains are transparent. Drain and set aside to cool.

When the quinoa has cooled combine with the potatoes, egg, onion, parsley and cumin in a bowl. Mix thoroughly then season to taste with salt and black pepper. Shape into croquettes and fry until well browned and cooked through.
