Although not derived from any specific recipe for Crimped cod, this recipe is typical of Victorian recipes for crimping fish and is based on Mrs Beeton's recipe for crimped skate.
Clean, skin and cut the cod fillets into slices (easiest if you have thin tail fillets). Roll these and tie securely with string. Bring a pan of water to a boil and add 55g salt per 500ml water. Add the fish and boil until done (about 20 minutes).
