This is a classic French Indian-inspired dish of prawns cooked in coconut milk and flavoured with curry powder.

Ingredients:

30 king prawns, peeled but with tails left on
200ml Coconut milk
1 onion, peeled and finely sliced
3 tbsp sunflower oil
2 tbsp Curry powder (either mild madras or Breton kari)
10 sprigs of coriander (cilantro), finely chopped
Salt and freshly-ground black Pepper, to taste

Method:

Place a frying pan over medium heat. Add the oil and when hot use to brown the onion. Remove and set aside.

Increase the heat, add the prawns and flash fry until pink (about 5 minutes). Pour in the coconut milk, sprinkle over the curry powder, return the onions to the pan and season with salt and black pepper.

Stir to combine, reduce the heat and cook for 5 minutes.

Transfer the mixture to a serving bowl, garnish with the chopped coriander and accompany with rice.
