These are classic French-style crepes that include sugar and mashed bananas in the batter. They are commonly served for breakfast in Dakar, Senegal and are available from many patisseries and cafes. Pancakes are great any time of year, but as Shrove Tuesday is on the 21st February in 2023 and pancakes are a traditional way of celebrating the day before lent, why not try these African pancakes on this day.
Ingredients:
140g (1 cup) plain (all-purpose) flour
200ml (4/5 cup) whole milk
2 eggs
2 tbsp sugar
1 ripe banana, mashed until smooth
Melted butter for greasing
Method:
Sift the flour with a pinch of salt into a medium-size bowl and form a well in the middle. Mix the milk and 100ml of water together. Break the eggs into the well then start whisking slowly, incorporating the eggs. Add the milk and water in a steady stream, whisking constantly and gradually incorporating the flour as you do so. Scatter over the sugar and beat to combine ensuring you end up with a smooth batter.
Set the batter aside to rest for 30 mins, then whisk the in the smoothly-mashed banana. Ensure you end up with a smooth batter. If it looks a little lumpy use a stick blender to blend until smooth.
Heat a non-stick frying pan over a medium heat. Very lightly grease the pan with melted butter. Using a ladle, pour roughly 3 tbsp of batter into the pan and swirl it around so the bottom of the pan is evenly coated. You want to use just enough batter to make a delicate, lacy pancake. Cook the pancake for about 45 secs on one side until golden and then using a palette knife or fish slice, flip the pancake over and cook the other side for about 30 secs until it freckles. Note that because of the banana, this will be slightly thicker than normal crepes and may colour more darkly if you are not careful.
