Here is a recipe for a truly classic Christmas sweet (candy). Indeed, rum balls and truffles of various kinds seem to be synonymous with Christmas. Tasty and easy to make these are a great Christmas treat and also make an ideal seasonal gift. This is also a great way of using-up leftover sponge cake. As well as cake crumbs, you can also use sweet biscuits like Marie biscuits, butter cookies or shortbread to prepare this recipe.

Ingredients:

220g sponge cake crumbs (madeira cake crumbs are excellent)
2 tbsp cocoa powder
60g whole milk powder
60g desiccated coconut
400ml condensed milk
3 tbsp dark rum
finely-shredded desiccated coconut, for rolling
chocolate sprinkles, for rolling

Method:

Crumb the sponge cake then turn into a bowl and mix with the cocoa powder, milk powder and desiccated coconut.

In a separate bowl, mix together the condensed milk and rum. Work the liquid ingredients into the dry ingredients until the mixture comes together as a dough.

Take pieces of this dough and roll into balls. Roll the balls either in the coconut or in the chocolate sprinkles to coat (or use a mix).

Allow to try and serve. These also freeze well so that they can be prepared well ahead of Christmas.
