Creamed Corn

Ingredients:

Whole kernels cut from 6 ears of corn
30g unsalted butter
1 red chilli, finely chopped
1 tbsp sugar
2 garlic cloves, chopped
1 bunch of coriander stems chopped
2 tbsp double cream
juice of 1 lime
salt and freshly-ground black pepper, to taste

Method:

Add the butter to a pan over medium heat. As soon as it's melted add the corn kernels, chilli, sugar, garlic and chopped coriander stems. Stir to mix thoroughly then cook the mixture gently for 10 minutes. Add 250ml of water and stir to combine then cook for a further 20 minutes, or until the corn is soft. Remove from the heat and set aside to cool a little.

Turn 2/3 of the mixture into a blender or food processor and process until smooth (if desired you can pass this mixture through a fine-meshed sieve to render it even smoother). Return to the pot with the remaining corn mixture then stir-in the lime juice, cream and season. Warm the mixture through (but do not allow to boil).

This is a very versatile dish and can be served as a soup or as a accompaniment.
