Cream of Cheese Soup

Ingredients:

2 tbsp butter
3 shallots, thinly sliced
60g celery, thinly sliced
300ml water
120ml single cream
150g cheese spread
1 chicken stock cube
1/8 tsp freshly-grated nutmeg
80ml dry white wine
salt and freshly-ground black pepper, to taste
50g Gruyere cheese, grated
toasted Breads crôutons, to garnish
paprika, to taste

Method:

Melt the butter in a 3l saucepan over medium heat. Add the shallots and celery and fry gently for about 6 minutes, or until tender. At this point add the water, cream and cheese spread. Crumble in the chicken stock then stir in the nutmeg and the white wine.

Bring to a boil, stirring constantly and continue boiling for 1 minute. Season to taste then stir in the Gruyere cheese until melted. Divide between four warmed soup bowls, garnish with the crôutons and paprika then serve.
