Ingredients:

900g minced beef
120g cornflake crumbs
2 eggs
80g fresh parsley, chopped
80ml tomato purée
3 tbsp onion, grated
2 tbsp soy sauce
1/4 tsp garlic powder
1/4 tsp black pepper

For the Sauce:
480g cranberry sauce
360ml chilli sauce
1 tbsp brown sugar
1 tbsp lemon juice

Method:

Combine the beef, cornflake crumbs, parsley, eggs, tomato purée, onion, soy sauce, garlic powder and black pepper in a large bowl. Mix well then form into bowls between your hands (about 2cm in diameter is good). Place these in the base of a lightly-oiled casserole dish.

Meanwhile, combine the sauce ingredients in a saucepan and cook, stirring frequently, over medium heat until smooth and thoroughly combined. Pour the hot sauce over the meatballs then place in an oven pre-heated to 160°C and bake for about 40 minutes, or until the meatballs are cooked through.

Serve with rice or mashed potatoes.
