Cranberry Chutney

Cranberry Chutney is a traditional British recipe for a classic chutney of a blend of cranberries, onions, tomatoes, apples and garlic cooked in a blend of vinegar and sugar and which makes an excellent accompaniment to turkey or ham. Ingredients:

500g fresh cranberries
600g onions, peeled and finely chopped
500g tomatoes, blanched, peeled and sliced
675g cooking apples, cored and finely chopped
3 garlic cloves, crushed
600ml spiced malt vinegar
1 tsp ground ginger
2 tsp salt
675g demerara sugar

Method:

Combine the cranberries, onions, tomatoes, apples, garlic and spiced vinegar in a large saucepan. Stir in the sugar, salt and ginger then place over gentle heat.

Cook, stirring constantly, until the sugar has dissolved. Bring to a simmer and cook, uncovered, for about 90 minutes, stirring occasionally to prevent sticking, until the chutney is thick and syrupy.

Take off the heat then pour into jars that have been sterilized and warmed in the oven beforehand. Seal securely with a vinegar-proof lid then set aside to cool before labelling. Store in a cool, dry, cupboard for at least 3 weeks before use to allow the chutney to mature.

This makes an excellent accompaniment to turkey or turkey salad.
