Crab Fried Rice a Classic Chinese recipe for a dish of rice blended in a wok with crabmeat, leeks and beansprouts in a soy sauce and lime juice base that's served topped with thin slices of lime.

Ingredients:

150g long-grain rice
2 tbsp groundnut oil
125g tinned white crabmeat, drained
1 leek, sliced
150g beansprouts
2 eggs, beaten
1 tbsp light soy sauce
2 tsp lime juice
1 tsp sesame oil
1 lime, thinly sliced, to garnish

Method:

Bring a pan of lightly-salted water to a boil. Add the rice and cook for 15 minutes, or until just tender. Drain the rice, rinse under cold, running water then drain once more and set aside.

Place a wok over high heat. When hot add the oil and heat until the oil is almost smoking. Add the crabmeat, leek and beansprouts and stir-fry for 2 minutes. Remove the mixture with a slotted spoon and set aside.

Add the eggs to the wok and cook, stirring occasionally, for about 100 seconds, or until they just begin to set. Stir in the rice then add the crabmeat mixture.

Sprinkle over the soy sauce and lime juice then cook for 1 minute more, stirring to combine the ingredients.

Sprinkle over the sesame oil then toss gently to mix.

Transfer the crab fried rice to a serving dish, garnish with the sliced lime and serve immediately.
