Ingredients:
2 eggs
4 tbsp melted butter
450g cooked crab meat (mix of white and dark)
salt, black pepper and cayenne pepper, to taste
100g white flour
1 egg beaten with 2 tbsp water
200g fresh white breadcrumbs, seasoned
oil for frying
Method:
In a bowl, combine the crab meat, eggs and the spices. Bring the mixture together then shape into small flat cakes. Dip these in the white flour then in the beaten egg then coat with the seasoned breadcrumbs.
When all the crab cakes are made heat a little oil in a large frying pan and use to cook the crab cakes until golden on all sides.
