Courgette and Coriander Soup

This soup is an excellent way of using-up any glut of courgettes (zucchini) that you may have. Addition of coriander and chilli also lifts the flavour into something really special.

Ingredients:

12 small courgettes (zucchini) washed and roughly chopped
2 small onions, finely chopped
4 cloves garlic, finely chopped
1 red chilli, finely chopped
2 generous handfuls of coriander leaves, roughly chopped
150ml olive oil
1.5l light chicken stock
200g plain yoghurt

Method:

Warm the oil in a heavy-bottomed pan over medium heat. Add the onion, garlic and chilli and fry for two to three minutes (do not allow them to colour). Add the chopped courgettes, season and cook gently for 20 minutes.

Add the stock and bring to a boil. Reduce to a simmer and cook for 25 minutes then add the coriander. Liquidize the soup immediately and pass through a fine sieve. Season the soup once more at this point if needed.

Return the soup to the heat and warm through (do not allow to boil). Stir-in the yoghurt and serve immediately.
