Ingredients:
600g squash, peeled and cubed
600g shelled, roasted peanuts, crushed
1 tsp brown sugar
salt to taste
1 tbsp oil
chopped peanuts, to garnish (optional)
Method:
Heat a tablespoon of oil in a large frying pan and cook the squash until it begins to become tender, stirring often, for about 5 minutes. Add the peanuts, salt and sugar then mash the squash. Reduce the heat to a simmer and cook until the squash is tender (about five minutes further).
Serve immediately, garnished with chopped peanuts (if desired).
