This recipe, a common street food in Gabon, often served with fried plantains, a baguette or baked cassava.

Ingredients:

2kg beef shin, brisket or braising steak (any cut suitable for slow cooking)
Maggi sauce, to taste
hot chilli powder, to taste
100ml red palm oil

Method:

Mix together the red palm oil, Maggi sauce and chilli powder to make a marinade. Pour this over the meat. Turn the meat in this sauce, rubbing it in with your hand. Cover and set aside to marinate for 3 hours in the refrigerator (turn the meat frequently during this time).

In the meantime, pre-heat your barbecue. When the meat has marinated sufficiently, slowly cook on an outdoor grill over a charcoal fire. Use the lowest heat you can and turn and baste the meat frequently with more marinade and/or oil. Cook the meat for at least three hours. Serve sliced with a baguette and piri-piri sauce.
