Cou-cou is a traditional Barbadian recipe for a classic accompaniment or vegetarian dish of cornmeal and okra cooked in water until the mixture forms a stiff paste. The full recipe is presented here and I hope you enjoy this classic Barbadian version of: Cou-cou.

This is the classic cornmeal and okra version of the Bajan staple, cou cou that's also made with breadfruit.
Ingredients:
4 okra
1l water
280g cornmeal
500ml cold water
1 tbsp butter
1 tsp salt
Method:
Add the 1l water to a medium-sized pot and bring to a boil. Thinly slice the okra and add to the boiling water. Continue cooking for about 10 minutes, or until the okra are soft then lower the heat to a simmer.
Meanwhile, combine the cornmeal with the cold water and mix to form a paste. Stir this cornmeal mixture to the okra mix and stir thoroughly to combine. Season with the salt and mix to combine. Continue cooking over low heat, stirring constantly with a flat wooden spoon (known as a 'cou-cou stick').
Keep cooking until the cou-cou is very stiff and comes away from the sides of the pot. Transfer to a dish, place the butter on top and serve.
