Cossey (Bean Fritters): Classic Chadian recipe for a fritter made from a blend of beans, chillies and Maggi cubes fried in oil.
Ingredients:
150g white beans
1 hot chilli, mashed
1 Maggi cube
salt and freshly-ground black pepper, to taste
oil for deep frying
Method:
Wash and pick over the beans. Place in a large bowl with a pinch of baking soda and set aside to soak over night.
The following day wash the beans and rub them together to remove their skins.
Turn the beans into a blender and season with salt, black pepper, the hot chilli and the Maggi cube.
Pulse to chop then add a little water and process to a thick paste.
Heat oil in a deep fryer to 150°C. When the oil reaches temperature drop in the bean batter by the tablespoon. Fry for a few minutes until golden brown all over, turning half way through.
Drain on kitchen paper as you cook the next batch.
Serve warm.
