Raw Fry

This is a classic Cornish farmhouse-stye supper dish of fried bacon and eggs served with potatoes and onions cooked in the frying pan.

Ingredients:

8 rashers of bacon
4 eggs
2 tbsp lard
2 onions, sliced
4 potatoes, scrubbed clean and sliced
salt and freshly-ground black pepper, to taste

Method:

Take a large frying pan (one with a lid). Melt the butter or lard and use to fry the bacon and eggs to your liking. Transfer these to a plate and put in the oven to keep warm.

Layer the potatoes and onion slices in the pan, seasoning each layer with salt and black pepper as you add it. Add just enough water to cover then bring to a boil. Cover with a lid and continue cooking for about 15 minutes, or until the potatoes and onions are tender.

Serve the bacon and eggs with the onions and potatoes. Traditionally this is served with kale or spring greens on the side and plenty of crusty Breads.
