Cornish Fairings

These are a traditional buttery and crisp biscuit from Cornwall. If stored in an air-tight tin they will keep well for 3–4 days.
Ingredients:
100g unsalted butter, at room temperature
100g Unrefined Golden Caster Sugar
2 tbsp Golden syrup
175g Self-raising White Flour
2 tsp ground ginger
1/2 tsp Mixed Spice
1/2 tsp ground Cinnamon
1/2 tsp Bicarbonate of soda
Pinch of Salt
Method:
Pre-heat your oven to 180°C (160°C fan/355°F/gas mark 4). Line 2 baking trays with baking parchment.
Melt together the butter, sugar and golden syrup in a small pan over a low heat.
Sift together the flour, ginger, mixed spice, cinnamon, bicarbonate of soda and a pinch of salt together into a bowl. Form a well in the centre then pour in the melted butter mixture and gently stir to form a smooth dough.
Place heaped teaspoonfuls of the mixture onto the prepared baking trays, spacing them about 3cm (1 in) apart to allow room for them to spread during baking. Flatten slightly with a knife or the back of a spoon.
Transfer to the centre of your pre-heated oven and bake for 8-10 minutes until golden brown. Allow to cool and harden on the baking tray for 10 minutes before cooling.
Once classic variant of these biscuits is to dip half the biscuit in melted chocolate, allow to cool and set before serving. These are chocolate-coated fairings
