Nhopi (Corn Meal with Pumpkin) is a traditional Zimbabwean recipe for a classic dish of a carbohydrate staple made from cornmeal porridge mixed with cooked pumpkin and flavoured with peanut butter. Ingredients:
200g corn meal
1/2 tsp sugar
2 tbsp peanut butter
500ml water
225g pumpkin, peeled, cooked and mashed
Method:
Bring water to boil in a pan and add the corn meal. Cook, stirring frequently, until this forms a porridge. Now add the mashed pumpkin along with the sugar and peanut butter. Continue to cook on low heat for a few minutes until the mixture heats through.
Serve as a carbohydrate accompaniment to a greens-based soup.
