Colcannon is a traditional potato and cabbage dish known both from Ireland and Scotland (it is also known as 'Rumblethumps').
Ingredients:
450g boiled or mashed potatoes
450g boiled cabbage, drained
30g butter
salt and freshly-ground black pepper to taste
Method:
Mash the potatoes and finely-chop the cabbage mix. Melt the butter in a large saucepan and add the potatoes and cabbage to this. Mix the ingredients well over low heat and season to taste.
You can also mix the ingredients together before putting them in an oven-proof dish which can be cooked for some 10 minutes at 200°C (400°F/Gas Mark 6) until the top has browned.
