Coconut crab is a local treasure, so called because their main food is coconuts, and this curry is next-level delicious.

1 coconut crab (cleaned and chopped)
500ml coconut milk
1 onion, diced
2 garlic cloves, finely chopped
2 red birds eye chilli, minced
1 tbsp Polynesian curry powder
Salt, to taste
oil for frying
Method:
Heat oil in a deep frying pan or wok over medium heat. Scatter over the onion, garlic and chilli and fry until soft (about 3 minutes). Scatter over the curry powder and stir-fry for 90 seconds until aromatic.
Add the crab and fry brief. Pour over the coconut milk, bring to a simmer and cook for about 20 minutes, until the crab is cooked.
