Coconut crab is a delicacy in Palau, and this recipe showcases its sweet, tender meat by cooking in a rich coconut sauce. It’s a dish that’s as luxurious as it is delicious.
Ingredients:
500g coconut crab claws, legs and meat from the shell
400ml coconut milk
1 small onion, chopped
2 garlic cloves, minced
3cm piece of ginger, sliced
1 tbsp soy sauce
1 tbsp lime juice
Salt and freshly-ground black pepper to taste
Method:
Fry the onion, garlic, and ginger until fragrant. Add the crab meat and crab pieces and cook for 5 minutes.
Pour in the coconut milk, soy sauce, and lime juice. Bring to a simmer and cook for 10-15 minutes.
Season to taste with salt and pepper. Serve with steamed rice.
