Christmas Cranberry Conserve is a traditional American recipe for a classic conserve of cranberries cooked with oranges, pineapple apricots and sugar that is set with pectin and stored in jars. Combine the cranberries, oranges and pineapple in a large pan. Bring to a simmer and cook for 15 minutes, crushing some of the cranberries with a potato masher.
Add the apricots, pectin and cinnamon and bring to a rolling boil before adding the sugar. Boil for about 2 minutes, until all the sugar has dissolved then remove from the heat and skim-off any foam. Ladle into sterilized jars that have been warmed in an oven at 80°C, leaving 1cm head space.
Place in a boiling water bath and process for 5 minutes before cooling and storing. This will keep for up to 6 months.
