Chräbeli (Anise Biscuits)
Chräbeli (Anise Biscuits) is a traditional Swiss recipe for a classic biscuit (cookie) of an egg, sugar, kirsch and flour batter flavoured with ground anise that is baked in odd shapes and which are traditionally served as a Christmas treat. These anise-flavoured biscuits are a favourite Christmas treat in the Basel region of Switzerland.
Ingredients:
4 eggs
450g icing sugar
pinch of salt
1 1/2 tbsp ground anise seeds
1 tbsp kirsch
550 to 600g plain flour
Method:
Combine the eggs, icing sugar, salt, anise and kirsch in a bowl. Stir with a wooden spoon for about 5 minutes, or until thoroughly blended. Add the flour and mix in to form a dough.
Form the dough into rolls about 1.5cm in diameter and cut into pieces about 5cm in length. Cut each piece about 3 times at an angle and bend then slightly (see the picture above for the effect).
Lightly grease two baking trays and arrange the dough pieces on it dry. Set aside to dry for between 24 and 48 hours at room temperature (ensure that where you place them is dry and draft-fee).
Transfer to the lower third of an oven pre-heated to 140°C and bake for about 25 minutes or until crisp and only very lightly browned. Turn the oven off and prop the door open with the handle of a wooden spoon.
Allow the biscuits to cool completely then scrape off the baking tray and store in an air-tight tin.
