Cabbage Sautéed with Beef (Chou Sautés au Boeuf): Cameroonian recipe for a stew of beef and cabbage in a chilli, herb, shallot and garlic base.

Ingredients:

1kg beef, cubed
6 large tomatoes
2 large yellow chillies
1 bunch of herbs (parsley, celery [with leaf], leek, African blue basil)
1 large shallot
1 clove of garlic
1 hot chilli, finely chopped
2 small cabbages, shredded
3 tbsp soya oil
salt, to taste

Method:

Cut the meat into strips, season with salt and add to the pot with the yellow chillies. Bring to a simmer, cover and cook gently for about 40 minutes, or until the beef is cooked in its own juices.

In the meantime, pound together the herbs, garlic, onion and tomato in a mortar. Add to the pot with the meat, bring to a simmer and cook for 10 minutes. At this point add the oil and cook for 5 minutes more.

No add the shredded cabbage and the julienned courgettes. Season to taste and stir-fry for about 15 minutes, or until the vegetables are crisp-tender.

Serve accompanied by steamed white sweet potatoes.
