Chocolate Guinness Cupcakes: An Irish recipe for a cupcake made from a chocolate, Guinness and sour cream batter that makes an excellent St Patrick's day treat.
Combine the butter and Guinness in a large saucepan. Set over medium-low heat and cook gently until the butter melts.
Take off the heat and beat in the cocoa powder and sugar, whisking until the sugar has melted.
In the meantime, combine the eggs, sour cream and vanilla extract in a small bowl, beating well to combine. Add the Guinness mixture, along with the flour and baking powder.
Beat the ingredients to form a batter then divide between 12 muffin tin wells lined with paper cases.
Transfer to an oven pre-heated to 170°C and bake for about 25 minutes, or until well risen and a skewer inserted into the centre of the cupcakes emerges cleanly.
Allow to cool in the tins for 5 minutes, then turn out onto a wire rack to cool completely.
Decorate by piping vanilla buttercream over the top. Garnish with candy shamrocks if desired.
