This is a fresh chipotle paste made with smoked fresh chipotle peppers, spices and olive oil. It's an excellent kitchen stand-by that gives a dramatic smoky kick and a mild chilli heat to any dish. It's an important ingredient in Mexican cookery. I get the smoked chipotles from my local greengrocer and always buy enough to make a jar of this sauce.
Ingredients:
10 smoked chipotle peppers, chopped
2 garlic cloves, minced
1 tsp cumin powder
1 tsp coriander powder
60ml (1/4 cup) olive oil (you can use any other fairly-neutral cooking oil as well)
Method:
Chop the chillies, place in a mortar and pound to a paste. Scrape into a small bowl, combine with the garlic and spices and mix well to combine.
Using a fork, work in the live oil, mixing everything thoroughly together.
Place the bowl in the fridge and allow the flavours to infuse for 1 hour.
