Chinese Fish Cakes

Ingredients:

350g mild white fish fillets
150g peeled prawns
30g dried scallops (soaked)
3 tbsp chopped coriander
3 spring onions, minced
1 egg, beaten
3 tbsp cornflour
1 tsp sugar
1 tsp salt
1/4 tsp ground white pepper
1 tsp chicken stock powder
2 tbsp water
1 tsp sesame oil
3 tbsp oil for frying

Method:

Soak the scallops in warm water 30 mins. Drain and mince.

Slice the fish thinly, then smash into a paste using the flat side of a cleaver. Repeat with prawns.

In a bowl, combine pastes with scallops. Add in all the marinade ingredients except sesame oil.

Mix vigorously for 5 mins until the mixture is stringy and elastic. Now add the sesame oil. Shape into balls.

Heat oil in pan, then flatten balls into cakes.

Once the oil is hot, f the fish cakes for 4 mins per side until golden.

Serve with warmed dipping sauce.
