Chicken Micronesia

This baked chicken dish is full of tropical flavours, including coconut and pineapple.

Ingredients:

750g bone-in chicken cut into serving-sized pieces
120ml soy sauce
210g pineapple (fresh or tinned)
4 tbsp pineapple juice (drained from the can of pineapple, or bottled juice)
½ tsp minced ginger
1 medium onion cut into rings or slices
4 tbsp fresh coconut, grated or dried, flaked

Method:

Prepare the marinade by whisking together the pineapple juice, soy sauce, and minced ginger in a bowl.

Place the chicken pieces in a dish or pan and pour over the marinade. Turn the chicken to coat it in the marinade then cover, place in your refrigerator and marinate for at least an hour (over-night is best).

Pre-heat your oven to 190℃.

Remove the chicken from the marinade, discarding any excess. Grease a baking dish or roasting tin then arrange the chicken pieces in the base. Top with pineapple pieces, coconut, and onion rings or slices.

Transfer to the centre of your pre-heated oven and roast for 35–45 minutes, or until the chicken is browned and cooked through.

Serve hot.
