Chicken Baked with Potatoes and Garlic: An Irish recipe for a dish of chicken pieces roasted with potatoes onions, garlic and rosemary in an olive oil base.
Ingredients:
1.5kg chicken, cut into 12 to 16 pieces
900g yellow, waxy, potatoes, quartered
1 onion, sliced
20 small sprigs of fresh rosemary
20g garlic cloves (leave unpeeled)
120ml olive oil
salt and freshly-ground black pepper, to taste
Method:
Combine the chicken pieces, potatoes, onions, rosemary, garlic and seasonings in a large, shallow, baking dish. Stir to combine then pour over the oil before mixing the ingredients once more.
Transfer to an oven pre-heated to 220°C and bake for 20 minutes. Reduce the oven temperature to 190°C and bake for an additional 45 minutes, turning the chicken and potatoes occasionally, so that they cook evenly and the garlic is crisp.
