Chibwabwa (Greens, Vegetable and Peanut Butter Stew)
Chibwabwa (Greens, Vegetable and Peanut Butter Stew) is a traditional Zambian recipe for a classic accompaniment of boiled pumpkin leaves and vegetables finished in a peanut butter sauce. This is a classic accompaniment of greens, vegetables and peanut butter from Zambia. It's typically served as part of a meal alongside nsima porridge and roast or barbecued meat.
Ingredients:
A bunch of Pumpkin leaves
1 carrot, finely chopped
2 tomatoes, finely chopped
2 onions, peeled and finely chopped
salt, to taste
2 tbsp peanut butter
Method:
Thoroughly wash the pumpkin leaves then pat dry and shred quite finely.
Bring 500ml (2 cups) lightly-salted water to a boil. Add the pumpkin leaves and blanch for 3 minutes.
Now add the carrot, tomatoes and onions to the same pot. Return to a boil and cook for 5 minutes more.
At this point stir in the peanut butter and mix everything to a thick paste.
Serve as an accompaniment to nsima porridge and roast meat.
