Cheese Crumble Topped Mash: A British recipe for an accompaniment of cheesy mashed potatoes with an onion, breadcrumb, garlic and parsley crumble topping.

Ingredients:

900g floury potatoes, peeled
25g butter
2 tbsp milk
50g mature Cheddar cheese, or Stilton cheese, grated

For the Crumble Topping:
40g butter
1 onion, cut into chunks
1 garlic clove, crushed
1 tbsp whole-grain mustard
175g fresh wholemeal breadcrumbs
2 tbsp fresh parsley, chopped
salt and freshly-ground black pepper, to taste

Method:

Bring a pan of water to a boil. Add the potatoes and cook for 10 minutes, or until cooked through and tender.

In the meantime, prepare the crumble topping. Melt the butter in a frying pan. Add the onion, garlic and mustard and fry gently for 5 minutes until the onion chunks have softened (stir constantly during this time).

Place the breadcrumbs in a mixing bowl and stir in the fried onion. Season to taste with salt and black pepper.

Once tender, drain the potatoes thoroughly then place in a mixing bowl. Add the butter and milk and mash until smooth. Finally, stir in the grated cheese whilst the potato is still hot.

Spoon the resultant mash mixture into a shallow ovenproof dish and sprinkle over the crumble topping. Transfer to an oven pre-heated to 200°C and bake for about 12 minutes, or until the crumble topping is golden brown and crunchy.

Serve hot.
