SChayote-potato Cakese (Chayote-potato Cakes)

Chayote-potato Cakes is a traditional French Guianan recipe for a potato cake accompaniment or snack made from a blend of chayote squash and potatoes bound with eggs and yellow cornmeal that are fried to cook. Method:

Place the chayote, potato and onion in a potato ricer and squeeze out all of the excess moisture. Transfer to a bowl and mix in the eggs, cornmeal and seasonings.

Place a frying pan over medium heat. When hot add the oil then drop in about half a cupful of the chayote mixture into the pan, flattening it with the back of a spoon (they should each be about 10cm in diameter).

Cook on both sides until lightly browned, then transfer to a warmed plate and keep hot.

Repeat the cooking process all the the mixture has been used up.

Serve as an accompaniment or as a snack with hot sauce.
