Char-grilled Venison Steaks a Classic British recipe for a barbecue dish of venison steaks in a red wine and onion marinade served with jacket potatoes.
Ingredients:
4 venison steaks
150ml red wine
2 tbsp sunflower oil
1 tbsp red wine vinegar
1 onion, chopped
a few sprigs of fresh parsley
2 sprigs of fresh thyme
1 bayleaf
1 tsp caster sugar
1/2 tsp Dijon mustard
salt and freshly-ground black pepper, to taste
jacket potatoes, to accompany
salad leaves and cherry tomatoes, to accompany
Method:
Arrange the venison steaks in a shallow non-reactive dish.
In a screw-top jar, combine the wine, oil, red wine vinegar, onion, parsley, thyme, bayleaf, sugar, mustard, salt and black pepper. Shale vigorously to combine, then pour the mixture over the venison. Turn the steaks to coat then cover and set aside to marinate in the refrigerator over night. During this time, turn the meat several times to ensure an even coating in the marinade.
Place the meat on the oiled rack of a barbecue set over hot coals. Sear the meat over the hottest part of the barbecue for 2 minutes per side, then move the steaks to an area with less intense heat (or lift the rack upwards) and continue cooking for about 4 to 10 minutes more per side (depending on how you like your meat cooked).
Serve the barbecued venison steaks accompanied by the jacket potatoes, salad leaves and tomatoes.
