Chana Chaat or Chole Chaat is a delicious and tasty snack made with boiled chickpeas, vegetables and chutneys. Tangy, sweet, spicy, crunchy and lip smackingly good

Ingredients:

For the Chickpeas:
170g dry chickpeas
½ tsp salt
875ml water

Other ingredients:
1 small onion, finely chopped
1 medium tomato, finely chopped
105g cucumber, finely diced
3 tbsp coriander leaves, finely chopped
1 tsp mild red chilli powder
1 tsp chaat masala
4 tbsp yoghurt ( thin it with 1 tablespoons of water)
1- 2 tbsp pudina chutney
1 tbsp date chutney
lemon or lime juice, to taste
salt, to taste
sev, to taste
crunchy peanuts, to taste
coriander and mint chutney

Method:

Wash and soak the chickpea in water for 8 hours. After 8 hours drain the water, add fresh water and salt and cook the chickpeas until tender. If cooking in an electric pressure cooker (instant pot), add the soaked and drained chickpeas along with 825ml water and 1/2 tsp salt. Pressure cook for 20 minutes. Let the pressure release naturally.

Prepare the coriander and mint chutney according to the recipe.

Add all the ingredients and water to a blender and process until smooth. Scrape down the side and grind again. If needed to, adjust the amount of water. Use the chutney as needed and store the rest in the refrigerator or freezer.

To assemble the Chaat: to a large bowl add the cooled chickpeas, onion, tomato, cucumber, coriander, salt, chaat masala and red chilli powder. Mix everything together gently.

Add the lemon juice, coriander and mint chutney and date chutney and mix it again.

Add the yoghurt and mix it in well. Taste and adjust the seasoning. Serve it as is or top with some sev or spicy peanuts.

You can also serve the chaat topped with more chutneys, yoghurt, sev, spicy peanuts, little bit of diced onion, tomato, coriander and a drizzle of yoghurt. Serve immediately!
