Mix together the jerk pasta and soy sauce then pour this mixture into a large, shallow dish. Add the chicken and toss to coat. Cover and refrigerate overnight. Bring the chicken to room temperature before cooking.
Next, pre-heat your barbecue. Once the coals are covered with a thin layer of white ash, add the chicken and barbecue, turning occasionally. Barbecue until well browned and cooked through, (about 35-40 minutes). If desired, cover the barbecue for a smokier flavour.
Transfer the chicken to a platter and serve with mango salsa.
