"Cauliflower Cheddar Fritters: A British recipe for a snack or starter of a flour, milk and egg batter containing cauliflower and cheese that's deep fried and which a great party nibble for New Year.

Ingredients:

120g plain flour
1 tsp baking powder
1/2 tsp salt, or to taste
1/4 tsp freshly-ground black pepper
1 egg
120ml milk
1 tsp melted butter
100g cauliflower florets, chopped
100g grated Cheddar cheese
50g onion, finely chopped

Method:

Combine the flour, baking powder, salt, black pepper, egg, milk and melted butter in a bowl then beat until they form a smooth, lump-free batter.

Add the cauliflower, cheese and onion and stir to combine. Cover with clingfilm (plastic wrap) and refrigerate for 60 minutes.

In the meantime, heat oil in a wok or deep fryer to 180°C.

Drop in the cauliflower and cheese batter by the tablespoon and fry, turning once, until brown and crispy all over.

Remove with a slotted spoon and drain on kitchen paper as the next batch cooks.

Serve hot, sprinkled with sea salt.

If desired you can accompany with a dip.
