Ingredients:

60ml milk
1/2 tsp mixed spice
1/4 tsp salt
1/4 tsp freshly-grated nutmeg
115g margarine
60g shortening
60g plain flour
225g freshly-grated coconut
790g cassava flour
6 tsp baking powder
1/2 tbsp vanilla extract
60g seedless raisins
sugar to decorate

Method:

Chop the raisins as finely as you can then combine with all the remaining ingredients (except the margarine, shortening and milk). Add the milk, margarine and shortening to a pan and melt over low heat. When melted add to the flour mix and stir with a wooden spoon to combine. Continue mixing and, if necessary, add small amounts of water until the entire mixture is moistened.

Divide the mixture between two 20 x 10cm baking pans then flatten the tops with a moistened spoon then scatter a little sugar over the top to decorate. Place in an oven pre-heated to 150°C and bake for about 60 minutes, or until a skewer inserted into the centre of the cake emerges cleanly.

Allow to cool in the tin for 10 minutes then transfer to a wire rack to cool completely.
